This coffee was grown by Jairo Arcila at his farm, Santa Mónica. This micro-lot is 100% Castillo variety. It is more productive than Caturra and resistant to coffee leaf rust. Jairo and his team exposed this lot to a dry anaerobic fermentation period of 72 hours with the pulp intact. During this fermentation stage, passion fruit pulp and wine yeast were added. The cherries were then pulped and placed to dry on raised beds with passion fruit pulp placed amongst the coffee until the ideal moisture content was achieved.

We tasted this on a table full of wacky fruit and spice-macerated coffees. The various coffees were infused with cinnamon, peach, berries, and passion fruit. Out of all of them, this passion fruit-macerated coffee melded with the natural sweetness of the honey process is the best. Is this a wonder of nature? Sorta. Is this a way to make good coffee taste great? Maybe. Are some of the coffee elite going to thumb their noses at this technique? Possibly. But you know what? This is a dang good cup of coffee, and by hook or by crook, that’s what we’re all about. Give it a try and see what you think :)
