My main man Ari from Café Imports called me up to say he’d just sourced an amazing Guat we had to try. We roasted and cupped the sample and my dude was right on the money. This sassy Huehue is almost as perfect as Ari’s grandmother’s poutine (Canadian French fry awesomeness) and that says something. Look for a cup that’s sweet and balanced with notes of orange, plum, caramel, and chocolate – boom shakalaka!

Waykan is a pristine example of the dynamic character of coffees from Huehuetenango. It’s crisp stone fruit acidity is perfectly balanced by flavors of toffee and sweet almonds. In the Maya Q’qnjobal dialect in the region, waykan means “star, or light that shines in the sky at night.” Coffee plays a large role in Huehuetenango accounting either directly or indirectly for roughly 80 percent of the local economy.
