Los Nogales is the best decaf we've ever tasted! We were lucky enough to get our hands on some after this year's harvest at Los Nogales farm in Colombia, and we're so excited to share it with you. Weihong Zhang won the 2024 brewer's cup using Los Nogales's Decaf, which shows how special this coffee is. Look for big floral and berry flavors in the cup. We taste jasmine and honeysuckle, complemented by a sweet blackberry flavor.
The unique flavor of Los Nogales is the result of innovative processing at the farm. The harvesting process at Los Nogales is meticulous, involving over 30 skilled pickers who ensure only the best cherries are selected. After harvest, the beans undergo a 90-hour fermentation process using a sourdough-like starter, followed by meticulous washing to remove any residues. The coffee is then submerged in a natural solvent derived from the coffee's pulp for 48 hours. This process removes the caffeine without altering the coffee's flavor or aroma. The beans are removed and washed for a final time before being dried for eight days.
Los Nogales is an 80-year-old farm in Pitalito, Nariño, Colombia. Oscar, Angie, and Olga Hernández took over the farm from their father in 2013. They have carried on his father's dedication to innovation at Los Nogales and have transformed it into a modern-day production center. Oscar is the face of the business, forging new partnerships for Los Nogales. Angie's background in fermentation and microbiology has taken their coffee to the next level. Los Nogales is producing some of the most complex and exciting coffees we've tasted, and we are super excited to continue to work with them in the future.
