THE DEETS
This coffee comes to us from the Huehuetenango region in Guatemala, which produces some of our all-time favorite coffees. We love them for their clean, subtle citrus flavors and brown sugar sweetness. Ixlama is grown by small producers in the Highlands of San Pedro Necta and La Libertad. It’s a shade-grown coffee harvested and brought to the mill before being sundried and placed on “guardiolas” or coffee driers. It’s then separated by color using a fancy computer and then separated by size mechanically. The result is clean, bright, and crushable.
We’re no strangers to Ixlama here at PERC. We found our way back to this coffee after tasting a ton of this year’s Guatemalan offerings. Ixlama delivers exactly what we love in a coffee from Guat. Look for mild citrus and berry flavors, followed by a sweet, sugary finish. Give it to your aunt Barbara or your nephew Nate with the stick-and-poke tattoos.
