THE DEETS
Pocitos is a 40-hectare farm located in Cosautlan, Veracruz. It belongs to the Valdivia family. Carlos, a fourth-generation coffee farmer, has actively managed the estate for the past 10 years, focusing on specialty coffees. Carlos harvests the cherries for this coffee and transports them to the mill, where they're floated to remove quakers and defects. Finally, the cherries are dried in African-style raised beds for 20-30 days.
