THE DEETS
This coffee comes to us from the sibling team of Neel and Kavita Vohora. Their family has been producing coffee at their farm, Finagro, in Karatuu, just outside the Ngorongoro caldera in northern Tanzania, since 1971. This lot is an SL-28, a cultivar that descended from some of the earliest Arabica grown in Africa outside of Ethiopia. SL-28 is a Tanzanian stock chosen for its drought resilience and exceptional quality. It's now primarily associated with Kenya.
The Vohoras are known for their innovation in processing. They break tradition by incorporating a maceration period before processing. The specific cultivar determines the length of the pre-fermentation. In the case of this SL-28, they macerate the cherries intact on raised beds under protective tarps for 2-3 days before completing a 2-3 week drying process with the seeds still in the fruit. The dried coffee is placed in GrainPro and taken to the Vohora's facility in Arusha, where it is sorted, milled, and prepared for export.
