Edison Argote is a passionate coffee producer who has amassed considerable experience despite his young age. He is quickly becoming one of our favorites here at PERC. Edinson produces exceptional coffee at his farm, Quebraditas Coffee Farms. The process begins with harvesting the ripest cherries and then floating them to remove any undesirables. They're then oxidized for 12 hours and pulped dry. The seeds are fermented for 24 hours to remove the mucilage, followed by an additional 72-hour fermentation with ripe peaches. The coffee is rinsed clean and dried mechanically. The result is sweet, balanced, and articulate coffee. It starts with an intoxicating aroma of fresh peaches, and when it hits your lips, you’re rewarded with big notes of juicy peach, mango, and cane sugar in the cup.
We recommend resting fresh coffee before drinking it. This allows the volatility of the roast time to subside, and the sweetness and character to shine. For best results, rest washed coffees for 5–10 days, natural coffees for 10–15 days, and experimental processed coffees for 15–30 days.
