El Vergel Estate is owned by Martha, Shady, and Elias Bayter, a family known for producing world-class coffee. They also founded Forest Coffee, whose mission is to unlock the full potential of Colombian coffee through innovation and advanced processing techniques. For this lot, El Vergel partners closely with local farmers to source exceptional, perfectly ripe cherries.
Harvest begins with hand-picking the ripest cherries and delivering them to El Vergel, where they are sorted and floated for quality. Processing starts with a 24-hour pre-ferment, followed by a 24-hour fermentation with the fruit intact. The cherries are then depulped and fermented again for 5 days in mucilage anaerobically with yeast and strawberry flavors. The coffee is then rinsed and dried to the ideal moisture content.
The result is an intensely fruity cup bursting with notes of strawberry candy, red fruit, and creamy white chocolate sweetness.
We recommend letting fresh coffee rest to allow the beans to stabilize. This will result in a sweeter, more expressive cup. We rest washed coffees 5–10 days, naturals 10–15 days, and experimentals 15–30 days.
