THE DEETS
This coffee comes to us from world-renowned producer Elkin Guzman. He has grown coffee at his farm, El Mirador, for over 18 years. El Mirador consists of 30 hectares of sandy loam and clay loam soil, which provides excellent nutrition for the coffee. Guzman and his team are constantly experimenting with growing variables to improve the quality of the coffee. They use a semi-shade system to optimize temperature regulation and control photosynthesis. The coffee cherries are then hand-picked at the ripest and sorted to remove imperfections. The coffee is then dried on raised beds to the ideal moisture level, and the seeds are removed from the husk. It’s then bagged and prepared for export.
