The Deets

This coffee comes from Gerson Martinez. This coffee is a rare gesha varietal that Gerson has harvested from his plants that have reached at least three years of age. The ripest coffee cherries are hand-picked and taken to the mill, where they are rinsed, sorted, and placed on raised beds to dry to 10-11% moisture. The result is big, juicy tropical fruit flavors alongside all the complex floral notes you want in a gesha.

REST IN PEACE

We recommend resting fresh coffee before drinking it. This allows the volatility of the roast time to subside, and the sweetness and character to shine. For best results, rest washed coffees for 5–10 days, natural coffees for 10–15 days, and experimental processed coffees for 15–30 days.
