A SUPER BALANCED SEMI-WASHED PINK BOURBON
Forest Coffee was founded in 2019 with a vision to unlock the potential of Colombian coffee through innovative processing, education, and sustainability. Pink Honey was designed to showcase the variety’s distinct character. Whole cherries undergo a 36-hour pre-fermentation before being depulped and fermented anaerobically in their mucilage for 120 hours. The coffee is then dried mechanically for 30 days to a target moisture level of 11%. The result is a vibrant cup with sweet citrus acidity and notes of white grape, jasmine, and sweet tea.
