La Montana come from Gerson Adoni Martinez Villatoro at Finca San Rafael in Huehuetenango. La Montana's exceptional quality results from Gerson's dedication to his craft. He and his team hand-pick the ripest cherries and sort them for quality. Gerson prefers the natural process for his cherries, so he dries them on raised beds in the sun until 10-11% moisture. The result is a cup that reminds us of blueberry muffins, with big, dark fruit notes complemented by a long, sweet finish. If you close your eyes, you might think you're drinking natural Ethiopian coffee.
We recommend letting fresh coffee rest to allow the beans to stabilize. This will result in a sweeter, more expressive cup. We rest washed coffees 5–10 days, naturals 10–15 days, and experimentals 15–30 days.
