Cherry Cordial, Strawberry
This coffee comes from Ninety Plus. Founder Joseph Brodsky owns this farm in Volcan, Panama. Brodsky's approach is exceptionally meticulous. They hand-pick the ripest cherries and sort them for quality. The cherries are dried on the top level of a multi-level drying table until they reach 18% moisture. They're then moved to a lower level and rotated every 2 hours until they reach 11.5% humidity. They're then rested for 30-60 days before being milled for export. This Natural Gesha is an absolute stunner. It's got big, intense red fruit flavors (think strawberry and cherry) with waves of flavors that remind us of Werther's candy with a super clean finish.
We recommend letting fresh coffee rest to allow the beans to stabilize. This will result in a sweeter, more expressive cup. We rest washed coffees 5–10 days, naturals 10–15 days, and experimentals 15–30 days.
