Red Grape & Allspice
The Sharqi Haraz Cooperative is a collective of smallhold farmers cultivating rare and exceptional coffee in the mountainous region of Sana'a. The area's high elevations slow cherry maturation, extending ripening and yield coffee with heightened sweetness and complexity. The mineral-rich soil and rugged terrain provide the ideal environment for growing world-class coffee.
The producers blend generations of cultivation knowledge with intentional, modern processing. Harvest begins with the meticulous hand selection of the ripest cherries, followed by density and visual sorting to remove underripe and defective cherries. The cherries are then placed in sealed tanks to ferment anaerobically for 72 hours. After fermentation, the cherries are rinsed and slowly dried in the sun to a final moisture content of 11%, preserving their structure, sweetness, and stability. The coffee is then hulled, sorted, graded, and stored for export.
The result is an intensely sweet and complex cup, with layered notes of red-flame grape, fig, dried fruit, and allspice, with a rich fudge-brownie finish.
We recommend letting fresh coffee rest to allow the beans to stabilize. This will result in a sweeter, more expressive cup. We rest washed coffees 5–10 days, naturals 10–15 days, and experimentals 15–30 days.
