Passion Fruit, Nougat
This coffee comes from Finca La Riviera, owned by Julio Cesar Madrid Tisnes. La Riviera is located in the foothills of the Andes Mountains just outside of Pereira in the Risaralda Department. La Riviera's rich volcanic soil and wide temperature range allow the coffee cherries to develop complex and unique flavors. We taste flavors that remind us of tropical fruit, like passion fruit and guava, with delicate floral notes and a sweet, nougaty finish that tastes like a Three Musketeers bar.
We recommend resting fresh coffee before drinking it. This allows the volatility of the roast time to subside, and the sweetness and character to shine. For best results, rest washed coffees for 5–10 days, natural coffees for 10–15 days, and experimental processed coffees for 15–30 days.
