THE DEETS

A SWEET AND BALANCED COFFEE FROM RWANDA.

This coffee was produced by Jean Marie Vianney (JMV) Usekanabagoyi and processed at the Ngoma washing station in Nyamasheke, Rwanda. JMV delivers ripe, pre-sorted cherries to Ngoma, where they are density-sorted, pre-fermented for eight hours, depulped, and fermented in water for an additional 12 hours. After fermentation, the coffee is rinsed to remove any remaining mucilage and dried on raised beds, first in the shade and then in the sun until it reaches a target moisture content of 10.5–11.0%. The result is a sweet, balanced cup with notes of panela, dried apricot, and plum.
