THE DEETS

Apaneca is located near the Cordillera mountain range in western El Salvador, close to the Honduran border. This region is renowned for its high-quality coffee with a temperature range of 14°C to 23°C. The unique microclimate promotes sugar concentration in the coffee cherries. The folks at Delagua collaborate with local growers who share their passion for exceptional coffee. The meticulous processing at the drying facility ensures the highest caliber of coffee.

The cherries are hand-picked at their peak ripeness and taken to the drying area, where they are floated in water to separate the highest-quality cherries. The fruit is then fermented in an anaerobic environment for 4 to 12 days at temperatures of 18 to 21°C, allowing for a wide modulation of the process and achieving a high level of flavor development. The cherries are then dried for 20 to 25 days. This attention to detail is why the coffee is so dang good.

This is the second coffee we’ve sourced from the incredible team at Delagua, and they keep knocking it out of the park. The first was a big, bold Pacamara that blew our minds. This time, it’s a Gesha—so you know it’s gonna be good. Expect an explosion of intense fruit and elegant floral notes, leading to flavors of red grape, concord jelly, and Fig Newton—oh my! It all wraps up with a bittersweet farewell of dark chocolate, leaving your uvula shedding a single tear as the last sip goes down. All in all, you should probably buy this coffee—we did.

    Espresso: 3:1

  • Start with a coarser grind for both drip and espresso
