A STRAWBERRY FLAVOR CO-FERMENT FROM EL VERGEL!
El Vergel Estate, owned by the Bayter family, is driven by a mission to elevate Colombian coffee through innovation and advanced processing. For this lot, ripe cherries are sourced from local farmers and brought to El Vergel. Processing starts with a 24-hour pre-ferment, followed by a 24-hour anaerobic fermentation in fruit. The cherries are then depulped and co-fermented anaerobically for 5 days with yeast and strawberry flavor, and dried to 11% moisture. The result is intensely fruity, bursting with notes of strawberry candy and white chocolate sweetness.
