Cherry Cordial, Spiced Nuts
This coffee comes from Pocitos, a 40-hectare farm in Cosautlan, Veracruz, belonging to the Valdivia family. Carlos, a fourth-generation coffee farmer, is the estate manager. Carlos and the team hand-pick the ripest coffee cherries and transport them to the mill, where they're floated to remove defects. The cherries are dried on raised beds for 20-30 days to a 10-11% moisture level. The result is a sweet, smooth cup with flavors that remind us of ripe red fruit and brown sugar.
We recommend resting fresh coffee before drinking it. This allows the volatility of the roast time to subside, and the sweetness and character to shine. For best results, rest washed coffees for 5–10 days, natural coffees for 10–15 days, and experimental processed coffees for 15–30 days.
